Overnight French Toast

We are not big breakfast eaters at our house…it is usually Isagenix shakes for mom and dad (more on that to come) and cereal or oatmeal for the kiddos. There are some occasions that just cry out for big celebratory breakfasts though- Christmas and Easter morning, kids first/last sports games, friends/family staying from out of town, the first weekend of summer vacation, etc. While enjoying a big breakfast is sometimes great, spending all morning in the kitchen is definitely not my idea of fun (especially for the not-so-morning-person such as myself)!

In steps the Overnight French Toast to save the day- all the yum, none of the early morning prep! Not only is this breakfast delicious, it also feeds a lot of people. Perfect for the holidays! My husband and I prepped this on Christmas Eve…after the kiddos were in bed and just before Santa came to visit our house. On Christmas morning, all we had to do was pop it in the oven and enjoy the kids devouring their new goods. We served our Overnight Toast with turkey bacon, which was a perfect combo of sweet and savory.

  • 6 large eggs
  • 2 cups milk
  • 1/3 cup heavy cream
  • 1/3 cup plus 2 tsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • One loaf Challah bread, sliced
  • Maple Syrup, for serving

Directions:

Dip each slice of Challah bread into mixture, placing back into a “loaf” (see picture) in  a 9×13″ glass baking dish. Pour remaining mixture between each slice of bread. I used a baster to thoroughly get between each slice.

Cover with plastic wrap and place in refrigerator overnight (or at a minimum 2.5 hours).

In the a.m.- preheat oven to 375˚. Uncover toast, sprinkle remaining 2 tsp sugar overtop, and cover with aluminum foil. Bake covered for 25 minutes. Uncover and bake for an additional 30 minutes, or until top is golden brown and slightly crunchy, and inside of bread is fluffy (not saturated/moist).

DIY Christmas Gifts On a Budget- Candle Holders

Every year our family makes Christmas gifts for our friends and family (and teachers, bus drivers, trash collector, etc). Not only is it something fun to work on, but we love the appreciation homemade gifts get- there is something so comforting in receiving a gift that had some thought go into it and was made with love!

When I was browsing around in one of our local boutiques several months back, I found some beautiful candle holders. Flat white outside, and glittery gold inside. They were adorable! The con- they came in at $20 a piece! A little out of my price range for candle holders.

When Christmas gift planning and budgeting started this year, I thought about those candle holders…and wondered whether they were something I could imitate at home. And so I did…with my own Christmas flare!

Not only did our homemade candle holders turn out super cute, they were really inexpensive! I ended up making 6 candle holders for a about $23 (just short of $4 each)! Take that $20 candle holders.

  • 6 glass Candle Holders- $1 each at Dollar Value ($6 total)
  • Gold Glitter – $4.99
  • White Multi-Surface Acrylic Paint – $1.49
  • Harvest Gold Multi-Surface Acrylic Paint- $1.49
  • Matte Mod Podge – $6.99
  • Gold Oil-Based Sharpie- $1.69

 

Clean the candle holders thoroughly, making sure it is completely dry before you begin.  Mix Mod Podge with glitter (I used a lot to make sure the mixture was thick with glitter).

Paint the Mod Podge/glitter mixture onto the outside of the candle holder, spreading glitter as evenly as possible. Allow to dry and apply a second layer of mixture if needed. The goal is to have as much of the holder covered with glitter as possible. Note: The picture below is after only one layer.

Once Mod Podge/glitter mixture has completely dried, apply gold acrylic paint to outside.

 

Again, allow to dry before covering the gold paint with two layers of white acrylic paint (drying between layers). Note: The picture below shows one layer of white. You will need two to cover all traces of gold on the outside.

I added my Christmas flare, with a hand drawn gold Christmas tree using the Sharpie. The gold really pops when you have a candle inside, shimmering with a little Christmas charm ❤

A super easy and inexpensive gift that is cute and made with love! Enjoy all and Merry Christmas!!

December Stitch Fix Review

I was just as excited for this month’s Stitch Fix (my second!), as I was for my first! This month has been crazy busy…as this time of year always is…so I was ready for some great Christmas-time gear without having to hit the stores in person.

I made sure that my Stylist Note was crazy detailed for December. I told them I wanted: plaid, vests, skinny jeans, a warm jacket, and a little sparkle 🙂

Kristen M. was my stylist again, which I liked. Not only is it nice to have a little consistency, I feel like a stylist can only get to know your style if they have worked with you a few times and gotten to know YOU. Kristen’s note was sweet, even mentioning Living Swagger, and I definitely think she checked the boxes of my “want list”. That being said, I wasn’t as thrilled with this Fix as I was with the first…

Oswego Tie Neck Top – $68  / Jimmy Skinny Jean – $88

I said I wanted plaid and skinny jeans- check, check. The top is cute and definitely plaid, but reminds me too much of my maternity tops. For my figure, the fit just isn’t flattering. It is 100% Rayon, and should be hand-washed or dry cleaned (another big drawback for me). I will say, though, that the tie-neck detail and button sleeves are both feminine and fun.

The jeans actually fit great. They are the perfect amount of stretch and don’t seem like they will bag in the knees. The problem? The butt pockets are spread so far apart, they accentuate an area that I don’t need accentuated ; )

Time Carved Teardrop Chandelier Earrings – $28

A little sparkle- check. These earrings have lots of pros…love the length, the gold, the detail, and they seem well made. The con? I have way too many earrings…way too many…

I love this sweater! It seems so perfect for so many different occasions…from dressed down running errands to dressed up dinner date with the hubby. Cute flats, comfy boots, a skirt and booties- I can see it all! It is super warm and the Acrylic/Cotton blend should be hand washed.

Oakjoo Faux Suede Moto Jacket – $128

A warm jacket- check! This jacket is a winner, for sure. The faux suede outside is a contrast to the sweater-like inside. It is warm, it is stylish, and it is fun. Really, it is perfect! It is 100% Polyester, and must be dry cleaned (bummer I know, but that is pretty status quo for jackets). It is a perfect Christmas present to me from me ; ) Unfortunately, I just found an amazing jacket while I was on vacation and I just can’t justify two back to back…sad day for me.

Verdict: Returned

Fall Pumpkin Roll

Thanksgiving is one the best days of the year for us- we eat foods we wouldn’t normally take the time to make or enjoy, we spend time with family and friends we don’t always see, we truly take the time to acknowledge all the things we are thankful for, and when it’s all done- we sit down to relax and enjoy some football (tonight is a real treat- Bears at Green Bay!!).

This year I was extra spoiled…my family and I went and spent some time with my mom at her cabin and she cooked- everything. Well, almost everything. I have said it before, and I will say it again- my husband is undoubtedly the better baker of us two. Thanksgiving time is no different. Pumpkin Pie is his speciality, and one of his absolute favorite (non-chocolate) desserts. This year, he decided to try a slightly different take on the traditional, and went with a Pumpkin Roll. The end result?? Amazing!

This Pumpkin Roll is both easy and an absolute must try for your fall season festivities. I hope you enjoy this recipe and I wish you a Happy Thanksgiving from my family to yours!!

  • 3/4 c flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 3 large eggs (beaten)
  • 1 c granulated sugar
  • 2/3 c pumpkin pie filling (canned)
  • 1/4 tsp (approx.) nutmeg

IMG_0804Filling (All mixed together until soft):

  • 8 oz cream cheese (room temperature)
  • 1 c sifted powdered sugar
  • 6 TBSP softened butter
  • 1 tsp vanilla extract

Instructions:

Preheat oven to 375˚ and grease/flour a baking sheet. Combine flour, baking soda, baking powder, salt, cinnamon and cloves in small bowl. Combine beaten eggs and granulated sugar in larger bowl. Add pumpkin and stir in flour mixture. Spread evenly onto baking sheet. Sprinkle nutmeg evenly over the top of cake. Bake for 12 minutes (or until the cake springs back).

IMG_0805Sprinkle 1/4c powdered sugar onto a clean towel. Turn cake over onto sugared towel and roll vertically (so that the cake is long and narrow). Allow to cool.

IMG_0806Once cooled, unroll cake and spread filling evenly over cake. Roll the cake back up with filling inside, wrap in plastic wrap, and refrigerate for 1-2 hours. Dust with powdered sugar before serving.

Each roll will serve approximately 12, with about 310 calories per serving.

I received this awesome letter from my stylist, who also happens to be a Kristen M 🙂  She really paid attention to the notes I left her about my upcoming November events, and my style profile. I love that this note was so personal, rather than just some generic “welcome” note!! In with the note is a card for each item sent, with recommended styling options, which is another really great touch.

Presley Colorblock Button-Back Sweater – $68

I have to admit that I wasn’t sure about it when I unwrapped it but once I tried it on I realized I absolutely love this sweater! It has adorable button-back detail, and the color block is super flattering. I also think it would be adorable with a chunky scarf or necklace. The 80% polyester/20% wool mix must be hand washed, but can be tumble dried on low and ironed…a huge plus for me (if it would have been dry-clean only, it would have been a no-go). I don’t have any red sweaters and the button-back detail is just too cute to pass up!

Verdict: Kept

Arvella Dress – $78

I have to hand it to Kristen on this one…I would have never picked this up to try it on! It’s not my fabric, fit, style, nothing… But boy oh boy did this dress deliver! The dart detail, like Kristen stated, accentuates my figure and the color is unreal (Up close it even has some shimmer to it). My husband especially loved this one! Imagine how fabulous it would be with a gold statement necklace. It is a 95% polyester/5% spandex mix and must be dry cleaned.

Kristen suggested that I wear it to my reunion…unfortunately, my reunion is more “laid-back happy hour” and less “dress to impress”. This dress would be a major keeper…if only I had something to wear it to (which I don’t).

Diya Dress – $68

This dress is totally my style…relaxed, comfortable, and yet still super cute! The colors and details are great, and I think there would be so many ways to change the style up (belt it, sweater it, jacket it, fun tights, high boots, etc). It is cinched at the waist, so it still gives me a bit of shape. I think this a great one for fall…but can still be accessorized to work for almost every season! It is 100% polyester and can be hand washed.

Kristen suggested I wear this for my upcoming family pics, which I just might do!

Verdict: Kept

Mateo Fringe Edge Infinity Scarf – $34

I won’t lie, I’m a sucker for scarves…it’s cold where we live, and I’m always freezing. This scarf is definitely warm and I love the fringe edge detail. It’s one of those scarves you can pair with just about anything because of the color. Unfortunately, I already have some scarves similar in size (though they do not have the awesome fringe) so this one had to go back.

Rhonda Faux Leather Jacket – $78

This jacket is great for fall…100% polyurethane with knit sides. The brown color is great, especially for me because for some reason I always seem to buy black outerwear. I love the high neck, which can also be worn unbuttoned and folded out. I liked how stylish this jacket is, but feel as though I already missed the season for it here, as I am already preparing for winter jackets.

Verdict: Returned

Turkey Quinoa Enchilada Casserole

Before you can even say it, I’ll admit it…another ground turkey recipe…I know, I know…head hung.

BUT…this one is just too delicious (and easy) to pass up. This one is a hit with both the husband and the kids, and has officially replaced the go-to traditional enchilada casserole recipe that we got from a Mexican restaurant I worked for way back in the day (stay tuned for that recipe…it’s ridiculously good!!).

1 cup red quinoa (prepared as package states)
1 lb ground turkey (I add one package of taco seasoning)
1/2 c corn (I use white organic from Costco)
1/2 c black beans
1 avocado (chopped)
2 TBSP chopped cilantro
1 can mild enchilada sauce
1 can green chilies
1/2 tsp cumin
1/2 tsp chili powder
3/4 c shredded mozzarella
3/4 c shredded cheddar
Mix all ingredients other than turkey and quinoa in small bowl.

Layer in casserole dish: quinoa, turkey, mixed ingredients, cheese.
Bake at 375˚ for 30 minutes.

Makes 4 servings. This is about 471 calories for 1 serving.

Super Easy (but AMAZING) Chicken Noodle Soup

Fall is falling fast and cold weather is right around the corner. Not sure about your family, but ours are suckers for chili and soup during the fall and winter months when it is just too cold to be barbecuing outside.

My husband is a soup guru…I give him major props for the concoctions he comes up with (I promise to share them as we make them this year!) and I usually leave the soup-making (and baking) to him. This recipe, however, is so easy that anyone can make it…and make it delicious!

Jeremy’s Quick and Easy Chicken Noodle:

  • 2 boxes of organic, low sodium, chicken broth
  • 1 rotisserie style chicken, shredded
  • 1/2 bag “No Yolk” egg noodles
  • 1 cup white corn (shown in the picture is a can of corn…apologies for that, we use frozen organic white corn from Costco)
  • 2 carrots, chopped
  • 1 medium white onion, diced
  • 2 bay leaves
  • 1 Tbsp garlic salt
  • 1 tsp pepper
  • (Note: we sometimes add other vegetables like green beans, kidney beans, etc.)

In a large pot, bring chicken broth, vegetables, garlic salt, pepper, and bay leaves to a boil. Allow to boil for about 5 minutes and bring to a simmer. While simmering, pull chicken (you can chop, shred with a fork or pull) and add to soup. Add noodles about 10 minutes before you are ready to enjoy (note: we let this simmer for awhile to really get the flavors). Remove bay leaves and serve.

We serve ours with a few saltine crackers and a slice of toasted garlic sourdough. It is a family favorite…great for colds, sniffles, and snowy days alike ❤

Healthy (but DELICIOUS) Game Day Grub

We are football fanatics in our house…and I really mean fanatics. Sunday is a day long football fest…Seahawks and Broncos games, the RedZone Channel, fantasy teams, and food…yes, I said it, food! No football Sunday is complete without some sort of glutenous array of game day foods (usually consisting of pizza, nachos, wings, dips, and other unhealthy grub).

I have tried the route of going more more healthy…and even succeeded a few times in substituting chili or soup and salad…but have never really scored a touchdown with the family on game day options…until now! Instead of trying to swap out the menu completely, I decided to keep the menu options the same, and just switch out the ingredients we use to make them.

If you are looking for some healthy game day options, trust me- try these! My family loved them…and are even on board to having all of them on game days to come!

zucchini CHIPS:

  • Slice 2-3 zucchini into slices (I used my Spiralizer slicer…if you don’t have one- think about investing in one, they are amazing!)
  • Mix 2 Tbsp EVOO & 2 Tbsp White Balsamic Vinegar in a small bowl
  • Toss zucchini slices in mixture
  • Place on a cookie sheet covered with parchment paper
  • Coat with approximately 2 tsp Sea Salt
  • Cook at 200˚ for 2-3 hours, until crisp- rotating 1/2 way through

spinach and kale DIP:

Combine the following ingredients and refrigerate until ready to enjoy:

  • 1/4c carrot- shredded
  • 3 cloves of garlic- minced
  • 4 green onions- chopped
  • 1c kale- chopped
  • 1/3c red bell pepper- diced
  • 1c spinach- chopped
  • 1 tsp fresh dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp honey
  • 3 Tbsp Mayo
  • 2c plain greek yogurt
  • 1/4 tsp black pepper
  • 1 tsp garlic salt
  • 1/4 tsp paprika
  • 1 tsp sea salt

cauliflower PIZZA:

Ingredients:

  • 1 head cauliflower
  • 1 large egg
  • 1/3c mozzarella cheese (shredded)
  • 2 Tbsp parmesan cheese (grated)
  • 1 tsp basil (fresh)
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste

Preheat the oven to 425˚ degrees and line a baking sheet with parchment paper.

Break an entire head of cauliflower into florets and pulse in a food processor until fine (I use a manual processor and it works fine). Microwave in a microwave safe bowl for 4-5 minutes, drain (make sure you get as much water out as possible…I used a towel to press) and let cool.

In a bowl, combine the cauliflower with the mozzarella, parmesan, basil, oregano, onion powder, garlic powder, egg and salt/pepper. Divide into six pieces and form into small flat circular crusts on the baking sheet. Bake for 18-20 minutes.

Add any desired toppings (we used 1/3c marinara, 1/2c mozzarella, 1/4c turkey pepperoni cut into quarters, and 2 Tbsp basil) and bake an additional 10 minutes.

bell pepper NACHOS:

Ingredients:

  • 1 bag mini bell peppers
  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1 small can black olives- sliced
  • 2c shredded Mexican cheese blend
  • 1/2 large tomato- diced
  • 1/4c cilantro- chopped
  • 1c salsa with 1 tsp chili powder mixed in

Cut an entire bag of mini bell peppers into halves and clean out seeds and insides. Place peppers on a baking sheet covered in parchment paper.

Brown 1 lb of ground turkey over medium heat, until brown. Add 1 packet taco seasoning and 1 cup water. Simmer until water has been reduced.

Add turkey meat and vegetables to mini bell peppers and cover with cheese. Cook at 350˚ for 20 minutes and cover with salsa mixture once cooked.

Italian Citrus Turkey Casserole

Last night my husband and I were able to celebrate another successful healthy, kid-friendly, recipe! Kids ate (almost) everything on their plate, and didn’t even bat an eye at the garbanzo beans, which are usually a definite no-go. This is a super easy recipe that anyone can do and it came in at only about 375 calories per serving (before the rice).

Ingredients:

  • 1 lb ground turkey (I apologize that the protein in this one is ground turkey again…we eat it a lot…I promise to get some different meats up here for you soon)
  • 1 can organic garbanzo beans
  • 4 bell peppers of your choice- chopped (I used 2 green, 1 red, and 1 orange)
  • 4 stalks of celery- chopped
  • 1 medium white onion- chopped
  • 2 cloves garlic- minced
  • 1/4c lemon juice
  • 1/4c Italian dressing
  • 2Tbsp EVOO (A note for those of you who are used to soupy/saucy casseroles…this is NOT one! This dish is about 99% substance and only 1% liquid, so expect only a small amount of citrusy fluid on the bottom of the casserole dish once cooked)
  • 1 1/2c shredded mozzarella cheese

Directions:

  • Cook ground turkey on stovetop over medium heat until brown
  • While turkey is cooking, chop peppers, celery, and onions and combine with minced onion, garbanzo beans (drained), lemon juice, EVOO, and Italian dressing in a large bowl. Mix well, making sure all ingredients are coated with dressing/oil/juice mix
  • Add turkey to vegetables and, again, mix well
  • Transfer to a casserole dish and top with shredded mozzarella
  • Bake at 350˚ for 30 minutes

This whole dish took only about 20 minutes to prepare, which I was able to do before soccer practice (hurray! for all you multi-tasking mommas). We served ours over rice, which was absolutely delicious.

Cleaner, Fresher, Healthier, Cheaper Glass Cleaner

With young kids in the house, I am continually trying to find cleaning products or “hacks” that I can make or use that will not throw so many chemicals onto our home’s surfaces, or into the air. Another big draw to most homemade cleaning products, for us, is that most of the ingredients are those we already have around the house, meaning less store runs and less out of pocket expenses.

One of those cleaning products that I have recently replaced with a homemade formula is our glass cleaner. The homemade glass cleaner we use is not only made entirely of products we keep in the house at all times, but it is also made with inexpensive products and can be “customized” to suit your own families needs and preferences.

Take a look at the ingredients listed in a popular blue glass cleaner:

  • Water
  • 2-Hexoxyethanol
  • Isopropanolamine
  • Sodium Dodecylbenzene Sulfonate
  • Lauramine Oxide
  • Ammonium Hydroxide
  • Fragrance
  • Sky Blue Dye

  • 2 cups water
  • 1/4 cup Rubbing Alcohol
  • 1/4 cup White Vinegar
  • 1 TBSP Corn Starch
  • 5-6 drops Essential Oil of your choice (I use Lemon Oil, but think Peppermint or Lavender would work well too)
  • Mix well in a bowl so that all Corn Starch is emulsified and transfer to a spray bottle for use

**A quick note on the Essential Oils- if you don’t have them in your home, or use them, I highly recommend them! We love our doTerra Family First Aid Kit…and use it for everything from headaches and allergies to wound care and cleaning.

This glass cleaner produces great results and is safer for the family (note that it does still have Rubbing Alcohol). No way would I go back to the blue stuff…
